2 TB canola or peanut oil
1/3 white onion, diced
2 cloves garlic, minced
1 TB minced ginger
1-2 lbs dandelion greens, washed, ends removed, and chopped into 3-in pieces
tamari
1-2 TB garlic chili paste
1-2 TB fresh lemon juice
nutritional yeast (optional)

Instructions
Heat oil in a wok over high heat. Add onion, garlic, and ginger. Fry for 1-2 minutes. Add greens and tamari and mix. Cook until greens are shiny and wilted. Remove from heat, stir in garlic chili paste and lemon juice. Serve over noodles and top with nutritional yeast, if desired.
that looks delectable. i prefer dandelion greens steamed or boiled - and then i'll use the leftover water to make miso. when ar and i lived in colorado we'd pick wild dandelion greens and prepare them that way almost every day. great with garlic tahini tamari sauce (aka 'macro crack'), or perhaps balsamic. often great with and roasted olives and walnuts.
ReplyDeletei made something i think you'd probably enjoy the principle of - while not vegan, it easily could be. got a trader joe's four cheese pizza and a bag of large frozen broccoli chunks. baked the broccoli around (not on) the pizza. made a thick paste by stirring dribbles of tamari and tablespoons of tahini together, creamed the paste by stirring in dribbles of hot water, then finally folded in some garlic and cumin fried in olive oil. when the pizza came out the broccoli was tender yet barely of singed. used chopsticks to carefully cover each floret in the tahini sauce, then placed on the pizza. finally, lined the crust with a rivulet of chipotle salsa. broccoli florets dipped in macro-crack make the best vegan pizza toppin - and cheap, too! if i were to make a vegan version, i'd probably make a thin, yeasted dough, maybe add some asparagus, perhaps some tofu if i really wanted to make a meal ...
