Pad Thai from Lotus and Artichoke

I've been cooking a lot from the new(ish) Lotus and the Artichoke cookbook. The Pad Thai recipe was really nice.

this was my favorite one so far. i have also made (and liked) a green curry soup, tofu meatballs (for spaghetti), and stuffed mushrooms. but the largest category in the cookbook - and the one i'm most excited about - is indian food. :)

Thanks for the recommendations. Yes, there are lots of Indian dishes in there I want to try, too. :) I made the mac and cheese but was less-than-impressed but that could be because I just haven't met a vegan cheese sauce I like yet.
