Red Thai Curry with Potatoes, Mushrooms, and Tofu

Fast red curry: sauteed onion, garlic, ginger, celery, carrots; added tofu, mushrooms, parboiled potatoes, splash of tamari; simmered in mixture of coconut milk and curry paste.

Yum. Mushroom and potato love each other.
